New! Biodegradable packaging and other environmental news
August 5, 2008 by mozartbakeryWe’re proud to anounce that we are using new biodegradable packaging wherever possible.
Our cold drink cups and salad containers are made of corn based plastic, which is compostable and biodegradable. We’ll soon be using potato-based disposable cutlery, also compostable and biodegradable, we’re just waiting for our supplier to get them in stock, any day now.
Our plastic carry-home bags are made from a biodegradable material which is a by-product of the plastic making process, so not only does it biodegrade in the land-fill, it also reduces the amount of industrial waste being put in the landfill. These bags can also be recycled along with regular plastic shopping bags.
While we are very excited about these new products, we still encourage our customers to bring in thier own re-usable shopping bags, and whenever you can please enjoy your coffee or your lunch in our cafe, where we can serve your food and drinks on real dishes.
We certainly make no claims to being a “green” company, but we are doing what we can to be as envioronmentally friendly as possible in our business practices. We are using compact flourescent lights, all our printing is done on recycled paper, we’ve installed anti-glare tint on our windows to reduce energy consumption, and we are delivering our wedding cakes in a fuel-efficient SmartCar. We’ll continue to make changes wherever we can!

Saving The Top Tier

If you are planning on saving the top tier of your wedding cake for your first anniversary, but aren’t sure whether it will still taste fresh after a year in the freezer, don’t worry, your cake will taste great as long as you take the proper steps.
Not all cakes are freezer stable. Some fillings, like fresh fruits and berries, or Italian custard will not freeze well. Buttercream, mousse, ganache, dulce du leche and lemon curd all freeze very well.
Be sure to let me know if you plan on saving the top tier so I can provide a seperate box to take it home in. If you have fresh or gum-paste flowers on your cake, remove them before freezing the cake. If the cake was cut at all, press plastic wrap over the cut edges, then place the cake in the box. Put the boxed cake in your freezer for at least four hours, or overnight to ensure it it frozen solid. Once it is frozen, remove it from the box and wrap the cake in plastic wrap. Put it back in the box, then wrap the box in plastic wrap. Place it back in the freezer in a safe spot until your first anniversary.
To thaw the cake, take it out of the freezer the day before your anniversary. Remove all plastic wrap from the box, take out the cake and remove the plastic wrap. Put it back in the box, then place it in the fridge to thaw overnight.
As long as your cake is stored properly it should taste as good as it did on your wedding day!
Luigi and I froze our top tier, but we kept forgetting to bring it out on our anniversary! Shortly before our third anniversary we were moving to a new home. I was determined not to move the top tier with us, so we thawed it out and served to the friends who helped us on moving day. Our almost three year old Limoncello Mousse Cake tasted great!
5th Anniversary Celebration Saturday May 24

It’s hard to believe it’s already been five years, it seems like just yesterday that Luigi and I opened our bakery in Walnut Grove. We’ve had such tremendous support from our community, and we want to thank our customers for helping us realize our dream.
We’ll have balloons for the kids, complimentary coffee all day, and be sure to be there at 12 noon when we cut the anniversary cake! We’ll also have free samples all day, lots of in-store specials on baked goods and all of our fabulous giftware will be at 20% for the day.

A little girl’s dream!
One of my recent creations, this cake was made for one very lucky girl on her 11th birthday!
Silver and purple with white accents is a very popular colour scheme this season, for both wedding and birthday cakes. We even did a Confirmation cake recently in these colours. When deciding on a theme or colour pallette for your cake, remember that there are no rules anymore, your cake should be a reflection of you and your style.
